Rotti (flat bread) made out of rice flour, is perhaps the unique specialty of Karnataka. It is in many ways similar to the Thalipeeth of Maharashtra, but the ingredients are rice flour based. Consequently, it happens to be the popular breakfast item in many homes of Karnataka. Replace rice flour with Ragi flour and it becomes Ragi Rotti, another great favourite in Karnataka.
Here’s what I did… :)

Ingredients:
Rice flour - 2 cups
Cabbage - grated ½ cup
Carrot – grated ½ cup
Coconut – ½ cup shredded
Hing - a pinch
Salt – as per taste
Green chillies – 2-3
Jeera - 2 tsp
Coriander leaves - chopped - a handful
Water – approximately 1 cup
Oil – 3 tbsp

Method:
Mix all the ingredients above in a mixing bowl, bind well to form like chapati dough and allow the mixture to set for 10-15 min.
Grease a frying pan (or tava) with 2 tsp oil.
Take a ball of the mixture (as big as a tennis ball) and place it in the middle of the greased frying pan. Flatten the mixture on the pan with your fingers until it is round and flat.
Spread a little oil on it.
Cover the frying pan with a lid and cook it on med-low flame until it is cooked (color changes to cream).
Remove the lid and roast it for a couple of minutes. Turn it and roast it on the other side for a few more minutes or until golden brown.
Serve hot with Chutney or just plain fresh butter.
