Date Almond Milkshake




A great recipe to beat up the heat and kick up your energy…. :)
Rich in iron, vitamin and a nutritious drink …
A complete diet for the finicky kid….!!!

Ingredients:


Dates – 6 large pieces (deseeded)
Almonds – 6 pieces
Milk – 2 cups
Honey – 1 tbsp
Sugar – 1 tsp
Cardamom powder – A Pinch

Method:

Soak the dates and almonds in warm milk for about an hour or so.
Blend together all the ingredients for 4-5 minutes.

Coriander – Garlic Fried Rice


Good to add this under the Indo–Chinese Menu….


Ingredients:
Long Grained Rice – 1 cup (Basmati Rice)
Garlic – 8-9 cloves
Coriander – Handful
Green Chilly – 4
Red Chilli Powder – ½ tsp
Vinegar – ¼ tsp
Frozen Green Peas – ½ cup
Thyme powder – ¼ tsp (optional – I added this to enhance the taste)
Soy Sauce – ½ tsp
Oil – 1 tbsp
Salt – as per taste

Method:
Soak the rice for 15 min and cook well and cool on a plate, in order to separate each grain.
Grind the chilly and garlic coarsely to make a paste.
Now heat the oil in a wok and add the chilly-garlic paste and fry for a minute.
Add the green peas and fry for sometime. Once cooked, add the chopped coriander leaves and thyme powder.
Add soy sauce, salt and red chilli powder and fry for 3-4 minutes.
Last but not the least, now add the vinegar and the cooked rice and mix well.
Serve HOT with tomato/chilli sauce.

Ajwain Roti

Good for digestion.


Ingredients:
Wheat Flour – 2 cups
Ajwain / Carom Seeds – 2 tsp
Salt – as per taste
Ghee – as per taste
Water – Enough to make chapati / roti – dough
Amchur powder – ¼ tsp
Kalonji Seeds – ¼ tsp
Black Pepper – ¼ tsp





Method:
Mix the flour and all the above Ingredients along with spice powder except water and ghee thoroughly.
Add water 1 Table spoon at a time to make soft and pliable dough.
Knead it for few minutes by adding the ghee little at a time. Divide the dough into 4 equal parts and make balls. Roll them into chapatis / roti.
Cook the roti with/without ghee in a griddle and serve with side dish of your choice.
Due to the spice powder mix it tasted good on its own or with plain curds.

Strawberry Milkshake


A Refreshing summer drink.
Ingredients:
Strawberry - 10-12
Sugar - 2 tbsp
Milk - 2 glasses
Method:
Cut the Strawberry into small pieces. Add sugar and milk along with the strawberry and blend well for about 3-4 minutes.
The more you blend, the better is the smoothie / milkshake.
If needed, you can add a dollop of well-whisked cream or can add a dollop of ice-cream, with a spoon of choco-chips for the decoration.

Sweet Corn Fried Rice


I had a huge pack of unused sweet corn lying in the freezer for months. I thought the best way to use it up is to make simple fried rice .I made this on a whim & it turned out just lovely.


Ingredients:

1 cup long grained rice - cooked.
2 onions - sliced into long strips
3/4 cup - American sweet corn - fresh/frozen
1 tsp ginger chilli paste
1 tsp vinegar
1 tbsp soy sauce
Salt as per taste
2 tbsp oil
1 tsp red chilli powder


Method:

Soak the long grained rice in water for 15 minutes. Pressure cook the rice with 1 ¼ cup of water. Once done, cool the rice on the plate.
Meanwhile, heat the oil in a wok, add ginger chilly paste and fry for a minute or so.
Add sliced onions and fry till translucent.
Thaw the sweet corn and then sauté for a couple of minutes.
Now, add soy sauce, salt, red chilli powder and vinegar and fry for a minute.
Add the rice and mix well.

Serve HOT with tomato sauce or any other sauce of your choice.
